Latin name: Merluccius productus
Pacific hake or Pacific whiting is a ray-finned fish of the genus Merluccius, found in the northeast Pacific from northern Vancouver Island to the north part of the Gulf of California. It has a silver-gray color with black speckling and reaches a length of 90 cm. Pacific hake migrates vertically daily, from the surface of the depth down to 1000 m. Pacific hake is the object of size-able commercial fishery off the West coast of Canada and the United States. Today, most of the Pacific hake is used for skin-in IQF fillets production. Pacific hake is a whitefish with taste and texture similar to cod; however, it is softer and has smaller flakes.
