Atlantic cod is one of the most important commercial fish species in Northern Europe. Large scale traditional fisheries date back many centuries and have been an essential basis for many coastal communities as well as valuable merchandise. Atlantic cod is highly appreciated in the cuisine of many European countries, North America and Brazil, where Portuguese navigators brought salted cod in the 16th century. Cod has a mild flavor and excellent texture, with large flakes and very few bones. It is an absolute nutritional champion, having 0,4% fat and over 21% protein content. Cod is also cultivated nowadays. Due to its freshness and possibility to be prerigor, filleted farmed cod is almost exclusively sold fresh, while most of the captured stocks are sold frozen. Salted cod still accounts for a large proportion of the sales – with Portugal and Spain dominating the imports. Largest capture fisheries occur in Norway, Iceland, Russia, and Greenland.
